Malibu Farm’s Paella

I didn’t know I loved paella until it found me at my best friend’s wedding in Ibiza. Appropriate considering its origins. It was served in a pan with a diameter nearly as tall as me – which wouldn’t be ideal anywhere but a large gathering I suppose.

The couscous “paella” at Malibu Farm (the quotations denoting that this paella isn’t your typical version) is a beautiful sight – brilliantly colored vegetables atop perfectly seasoned couscous, and should your heart desire – crispy salmon for extra protein.

Its just the type of meal your friends would be impressed by if you presented it to them at dinner! Enjoy!

Vegetarian Couscous Paella | Helene Henderson, Owner, Malibu Farm
1 box Israeli (pearl) couscous
6 cups chicken or vegetable stock
Pinch of saffron
1/2 cup lemon juice
1/4 cup olive oil
2 tbs capers
2 tbs chopped black olives
2 tbs parsely
2 tbs roasted & peeled red bell peppers
Vegetables of your choice!

Cook the couscous and saffron in the stock per the package instructions. Drain when cooked through and transfer the couscous to a bowl.

Season with salt, 1/2 cup lemon juice, and 1/4 cup olive oil. Stir in 2 tables spoon each: capers, chopped black pitted olives, parsley, and roasted and peeled red bell peppers.

The couscous is the “rice” for the paella. Top with vegetables of your choice – baked butternut squash, marinated beets, blanched green beans, sautéed zucchini or other vegetables of choice.

Optional: add tofu, chicken, steak, or seafood

Not only that but earlier in the day I was explaining to him how cool you are as we were looking at your book in Anyhropologie! Such a weird coincidence to wake up and see a picture of this divine paella on your post. Apparently we are tracking ????

    Sounds good…but to call this paella is far-fetched to say the least.

    Yes, Maria, I agree. Paella is a classic Valencian dish, which can have seafood, meat, vegetables, but rice and olive oil are always part of it, and the rice crust, or Socarrat I can’t image with couscous.

    So please Malibu Farms, you have a lovely dish, but don’t call it Paella.

  • Absolutely, this dish seems very good, but, made without rice, there not even a remote link to paella. Except maybe the use of olive oil !
    So please change the name !

  • Sorry! This i not a Paella.
    This is something of “fusion” Something that a chef decided to call in the list Paella, but… this is not a Paella.
    Paella is a typical dish from Spain. Is origins are in Valencia region.
    Paella´s are cooked in a special metallic pan called paellera.
    Paella´s are always done with white rice and saffron. They have seafood and sometimes meat, and vegetables of course.
    You can find Paella´s in all Spain.
    Forgive me, however I was born in Portugal, my rooths are in Spain. So… I know very well Paella´s.

    Seems delicions, but as a valencian girl I MUST say that this dish and a true paella are far from similar. Please, come to Valencia to enjoy the real one! And please, please, please Malibu Farms, consider to change the name of the dish, it’s kind of ridiculous…

  • Looks very very nice! And they can call it as they please, of course! But… would they call a carpaccio “sushi” o ramen to “spaguetti”? Gastronomy is culture, and by using its terms properly we broaden it.
    Paella admits a lot of variations, as long as you cook it with rice and in the “paellera” (that special pan).

    just looking at the list of ingredients, this recipe sounds lovely.

    is Malibu Farms in NYC too? in downtown LA (DTLA) I noticed there are many Malibu Farms spots recently so I thought it might be a west coast thing.

    Nice receipt! It could be a variable of a real Spanish paella. I am from Spain and I have never heard to use couscous to make it. since couscous is not an ingredient that we use frequently!
