Morandi’s Chocolate Budino

Morandi is one of my favorite restaurants in New York. It’s a great American Italian classic, absolutely delicious, and much too busy on the weekends, but great during the week, especially if you go at odd hours (one of the advantages of my job — the odd hours)(and also because that’s when you can see celebrities there, like Cameron Diaz last time, and I had the pleasure of seeing Richard Gere! Such a gorgeous man!!!) I love it and I’ve been going for years — so this week, we asked their chef Tony Liu to give us one of his recipes, something that would be simple to make at home: Chocolate Budino. So good!
Budino al cioccolato
Ingredients:
4 cups of milk
6 cups of heavy cream
1 cup of white sugar
1 teaspoon of salt
1 teaspoon of vanilla paste
4 ½ gelatin sheets
275 grams of milk chocolate
150 grams of dark chocolate
Procedure:
Bring milk and cream to boil in pot, then mix in sugar, salt, and vanilla paste
Add in gelatin sheets, whisk
Once mixture has a buttery-like consistency, mix in dark and milk chocolate
After a good, smooth consistency is reached, strain mixture
Divide into two serving cups and cool, keep refrigerated
Garnish with fresh cream and mint leaves to serve
Bon appétit!

Is there a mistake in the recipe? 4 cups of milk and 6 cups of cream (2.5 litres in total) seems too much for two portions.

OUI!!! Garance tu devrais filer la recette de notre mousse au chocolat nationale, complètement décadente pour le reste du monde car faite avec des œufs crus… Mais TELLEMENT délicieuse!!!
