We are continuing our Recipe Essential series with a few recipes from one of our favorites, Mia Rigden of Rasa Life. You might remember her from here or here. She will be with us all summer showing us the summertime basics. First up, guacamole!

There’s no need to overcomplicate guacamole. The key is quality ingredients, especially ripe avocados, and freshness. Make this right before your friends come over. Guaranteed it won’t last that long. Serves 4-6

Ingredients
2 ripe avocados
½ medium white onion, diced
1 tsp jalapeño, sliced
½ cup cilantro
Juice of 1 lime
Pinch of sea salt

Directions

1. Slice avocados and add to a bowl. Mash with a fork, until it reaches the desired consistency—more chunky than smooth.

2. Add diced onions, jalapeños, lime juice and a pinch of salt. Mix together until fully incorporated. Feel free to add more or less jalapeño, depending on how spicy you like it. I’d also recommend trying the jalapeño before adding, as some are spicier than others.

3. When ready to serve, mix in cilantro and dive in with chips or crudité. Add to your favorite salad, taco, fish, vegetables or meat dishes.

    OK, if you don’t want breath like a demon from the depths this recipe really should have you dice the onion and let it sit with the lime and salt first, BEFORE you dice and smash the avocado. The lime and salt will, ever so slightly, mellow the harshness of the onion.

    Of course, I usually use red onion and let it sit in a salted, vinegared ice water bath for 10 minutes first. Because onion breath is really, really hard to get rid of.

  • Very good guac recipe; mine is essentially the same but with scallions for onion, and I pound them up in a mortar with the jalapeno and cilantro and a bit of salt first, to make a rough paste. It melds better with the mashed avocado. Sometimes I add sliced grape tomatoes, but that’s an extra.

  • Who cares! The girl looks chic with all the accessories while cooking! Do you know the jewelry is also Mexican?? I wish I looked this awesome while making guac.
