Seamore’s Fish Tacos

It’s crazy – I had almost never eaten Mexican food before moving to the US and now… it’s one of my favorite foods. I’m absolutely crazy about fish tacos, and I’m kind of always on the look out for the perfect one.
It’s also one of Chris’ and my specialties (we cook together!) since fish tacos are perfect for feeding big groups of friends… Anyway. A few weeks ago, I think I found a fish taco approaching perfection — at Seamore’s, a new seafood restaurant that opened in New York. Of course, one of their secrets is the fresh, delicious cut of fish, but I thought you might like to try it out at home, so here’s the recipe!
Seasonal Seared Fish Taco
Chef Gregg Drusinsky, Seamore’s NYC
4 servings
8 Fresh Corn tortillas
16 ozs yellow tail flounder fillet cut into strips
2 tablespoon of Canola Oil
½ cup kosher salt
Pico de Gallo:
4 Beefsteak tomatoes diced
1 large red onion diced
2 Jalepeno (diced seeds removed)
1 bunch cilantro washed and chopped
4 cloves garlic smashed chopped
1 tsp cumin
1 tablesoon kosher salt
Black bean Puree:
1 small can black beans drained
½ cup lemon juice
½ cup olive oil
1 tsp black pepper
Toppings:
2 heads little gem lettuce washed and shredded
1 cup crème fraiche
½ cup lime juice
2 red radishes shaved
Make Pico De Gallo. Combine all ingredients into a food Processor and pulse until incorporated.
Blend Black Bean Puree. Place all ingredients in a blender until smooth.
In a pan or on a hot grill, Char the tortillas and put onto a plate.
Season the fish with salt and pepper on one side and sear until golden brown.
Smear a spoonful of puree onto each tortilla. Top with gem lettuce.
Place the fish on top and garnish with pico de gallo and crème fraiche.
Serve with a lime wedge and voila!

Making good fish tacos is an art form- cooking just right, seasoning, accompaniments, and the right tortilla of course!
I LOVE MEXICAN FOOD!!! Know that they are famous for unhealthy. But the crispy nachos is just so tempted!
This healthy tacos could be the perfect snack and will never feel guilty.

Actually we’re not “famous” for being unhealthy. If you travel to Mexico and truly experience our diverse and complex cuisine from various regions, your palate would experience much more than Americanized watered-down versions of our delicious cuisine.
Mexican is one of the most delicious foods! Full of flavor and always exciting.

Arruugghh! Curse you, Garance! I just read your LovexStylexLife book and after I got to the part about tuxedos I had a vivid memory of a tux my mother tried to give me when I was all but 17. It was too long for me, too wide in the shoulders but it was so beautiful that upon looking at it, I felt as if a slice of heaven had beamed down to earth in black silk form. It had satin lapels and a satin stripe down the side of each trouser leg. It had gold chaining connecting the pieces that were supposed to be buttoned together — and no zip, truly you need to have had seen it to really appreciate a bespoke piece of work. I frankly don’t care to see a YSL smoking after having seen it. Long story short: I asked if I could alter it to fit. My mother said I could hem it, but if I altered it and got fatter, I would have destroyed it because no one else would fit it. I said I probably didn’t have anywhere to wear it to (note: I was 17). She donated it. SHE DONATED IT!!! I’m almost 40 now and I still want that tux SO BAD… you have no idea how bad a person can want a piece of clothing. I feel like punching myself: it was my dream evening outfit and SHE DONATED IT. I had forgot about the tux for a couple of years now but after reading your book… I… HOW CAN YOU DO THIS TO ME?

The best fish tacos are from the pacific coast of Mexico, is a must if you go to Cabo San Lucas, the riviera of Nayarit, etc.
